Purple Sweet Potato Iced Latte

This 3-ingredient drink is healthy, filling, and easy to assemble. It is perfect as breakfast-on-the-go or a quick snack in the afternoon. Sweet potatoes aren’t usually found in drinks in the United States, but it is a sensation in Korea. It’s even served at Starbucks locations there!

When I learned about sweet potato lattes, I wanted to try it but I was also very skeptical. I wasn’t sure how I would like blended potatoes with milk, so I did not attempt to make it until weeks later. However, I was pleasantly surprised by the taste!

I used steamed purple sweet potatoes, pictured below:

You can substitute with ube or regular sweet potatoes, but try to stick to the drier varieties. Once I tried to use the yellow Japanese yam instead, and my drink came out goopy because the yam I used was too sticky.

Ingredients
  

  • 2-3 medium sweet potatoes
  • 4-5 cups whole milk
  • 1 tbsp condensed milk

Instructions
 

  • Wash the sweet potatoes and steam them for 15 minutes or until you can easily prick them through with a fork.
  • If you choose to do so, you can peel the skin off at this point. I leave my skins on because peeling takes a long time. There is really no difference in taste, and the skin contains important nutrients too!
  • Chop the sweet potatoes into cubes and put them in the blender. Add 4 cups of whole milk and blend
  • Add in condensed milk and continue blending.
  • You can adjust the consistency of the smoothie by adding more milk. I find that I always have to add more milk because I prefer thinner smoothies.
  • Pour into smoothie cups and top with ice or whipped cream if desired. Enjoy right away!
