Honey Matcha Ice Cream

We had a bunch of leftover heavy cream and my sister was craving ice cream, so I came up with honey matcha ice cream! I feel like ice cream quality differs a LOT based on where you get it. My personal favorite ice cream is tied between Tin Pot Creamery and Salt and Straw. They both have such innovative flavor combos and amazing texture; blue jasmine, earl grey, and honey lavender are must-tries! For those who are more adventurous, the Black Olive Brittle & Goat Cheese from Salt and Straw is really good.

Makes enough to fill a loaf pan! Good for 4-6 people

Honey Matcha Ice Cream

Ingredients
  

  • 2 cups heavy whipping cream
  • ¼ cup condensed milk or whole milk
  • 3 ½ tbsp matcha powder
  • 3 tbsp granulated sugar only if you used whole milk
  • ¼ cup honey
  • Pinch of salt
  • Splash of vanilla extract

Instructions
 

  • In a stand mixer or using a handheld mixer (or even by hand!!), whip the heavy cream, adding the sugar gradually when it becomes frothy.
  • Continue whipping until the mixture reaches soft peaks. You can test this by lifting up a bit of the cream on a spoon, and the peak created by the lifting motion should fold over. Add in the milk, and continue to whip until medium-stiff peaks form.
  • Remove from the stand mixer, and stir in matcha powder. It may seem lumpy at first, but if you continue to mix it, there should be no need to sift it in.
  • Once matcha is incorporated, fold in the honey. Mix until well combined, then pour into a loaf pan or something of similar size. *I actually made 2 different flavors; if you like to experiment, just use a piece of foil to separate the ice cream!
  • Freeze for at least 4 hours. When ready to eat, let it sit at room temperature for 15-20 minutes before serving. Enjoy!

Notes

*You can adjust the sugar levels by tasting throughout the process! Just remember that honey is also a sweetener.
*Do not over-whip the cream otherwise it will turn into butter.
