Savory Green Onion Crepes- A Family Favorite!

I remember watching my mom making this for me all the time when I was little. She never measured any ingredients, but I put together a versatile recipe that supports any add-ins!
In Chinese these crepes are called “bing”, but it’s essentially a savory and thin pancake-esq crepe. It is more substantial than a crepe but not puffy like a pancake. I love the crispy edges around the sides!
These come together in under 15 minutes, and are cooked on the stove. It’s a perfect breakfast, lunch, or midnight snack food.

Savory Green Onion Crepe (Scallion Crepe)
These come togehter in under 15 minutes. They are the perfect breakfast, lunch, or midnight snack food!
Ingredients
- 2 cups flour
- 1 egg
- Salt and pepper to taste
- 1 entire stalk green onion/scallion I like to include the white part because I think it’s the most aromatic. Some people don’t like to use it, and that is completely fine. Use your own judgement!
- 1 ¾ cup water more if necessary
- 2 tsp sesame seed oil
- Vegetable oil for pan
Instructions
- Mix together the flour, salt, and pepper in a bowl, and whisk the egg in a separate bowl.
- Wash and chop the green onion into small pieces, and mix into flour mixture
- Slowly stir in egg, sesame oil, and water. The batter should be thinner than pancake batter, and should spread out over a pan with tilting motions. Add more water if necessary.
- Liberally oil a pan on high heat. Wait for the pan to heat up, and then turn down the heat to medium-high. Ladle the batter into the pan, and tilt the pan to cover the entire bottom.
- Cover with the lid, and and cook for 3-4minutes, or depending on how crispy you’d like them to be. I like mine to be really browned and have crunchy edges, so I tend to keep it in there longer.
- Flip it over to the other side, and turn the crepe while cooking so it doesn’t burn. The second side requires less time to cook because the crepe is thin. Once you achieve the level of browness you desire, it’s done!
- You can enjoy these with kimchi, chili oil, wrap veggies and meats inside, or simply eat them plain.
